We're
all about the greenbeans.
There is nothing that can quite match the taste of farm fresh green beans.
Sure, the prep time is a bit longer than if you were opening a can or using
a bag out of the freezer, but it's a real treat and one I like to take advantage
of since the season only lasts for a few months of the year. I think it's
a joy to cook with the freshest ingredients I can find.
How
to choose and store fresh green beans.
Buy the freshest and plumpest beans you can find. If they're limp, they're
not fresh. When you break them they should have an unmistakable fresh
"snap" to them. When you bring your fresh green beans home don't
wash them. This can cause them to develop black spot and spoil. They will
keep in the crisper drawer in your refrigerator for three to four days
with no problem. Don't wash them until you're ready to cook them. When
you're ready to use them run them under cold running water to rinse any
dirt off and drain them.

Cooking
fresh green beans.
Before
you decide how to cook your green beans consider their age. Very young
and tender green beans, or what are true "haricots verts" should
be used in recipes where blanching is all that is called for. More mature
green beans can handle longer cooking times.
Snip the very ends
of the beans off, about 1/4 inch. Now, decide how long you want your beans.
I usually cut my beans about 1 1/2 inches long. Sometimes, if I have an
unusually nice batch I may leave them whole, they may be up to 4 inches
long, it really is a lovely presentation.

Sesame and portobello green bean recipe
One of the wonderful things about fresh green beans is that you can add just one or two ingredients and have a fantastic dish. When you're choosing green bean recipes it's important to consider the type of green beans that you have. More mature green beans are best suited for recipes where they'll be boiled or simmered for long periods of time. .
Green Bean Salad
A recipe from my great-grandmother. This is a recipe that's always been a favorite of my Mom's. She's of German heritage and said that she learned it from her Grandmother. For this recipe you'll want to cook the beans until they are tender, but still slightly firm. Green Bean Salad Cut the ends off of one pound of green beans and then cut them into 2 inch lengths. Drop them into boiling water and cook them uncovered for 10-15 minutes. .
Thanksgiving Dinner
Last Thanksgiving was the first Thanksgiving meal I've ever cooked, at the tender age of 48. I'd always had a parent's house to go to, or a friends house, or had gone to a restaurant/buffet for Thanksgiving with friends. I am now married and between my mother-in-law, my sister-in-law and myself we decided that I'd be responsible for Thanksgiving dinner. Luckily there are only eight of us.
