Indian Vegetable Recipes

 





This is another easy Indian recipe. It's attributed to Cooking Light in their 1990 feature Around the World with Green Beans. This is a simple to make dish that includes very familiar ingredients that are taken up a notch with the addition of curry powder, which is easy to find in your local supermarket. It's a perfect side dish any night of the week.




Indian Style Green Beans & Carrots

1/3 Cup thinly sliced green onions
1 Teaspoon curry powder
1/4 Teaspoon pepper
2 Tablespoons reduced calorie margarine, melted
1/2 Pound fresh green beans

2 Medium carrots, peeled, cut into 1 1/2 inch Julienne strips

Combine first four ingredients in a bowl. Stir well and set aside.

Wash the beans; trim the ends and remove strings. Cut beans into 1 1/2 inch pieces.

Arrange the green beans and carrots in a vegetable steamer and place over boiling water. Cover and steam for five minutes or until tender-crisp. Drain well.

Add steamed vegetables to curry mixture and stir well to coat.
