Indian Green Bean Recipe

We love green beans and we love Indian food, so this recipe seems like a natural to us. We found it in the book "Sampling the Cuisine of India" by Sambhu Banik. It has a touch of sweet and heat, and is super easy to prepare.
Today most grocery stores carry jarred ghee in their international food sections.





Green Beans with Coconut


1 10 oz. package frozen French cut beans or 1 pound fresh green beans, French cut
4 tablespoons vegetable oil or ghee
1/2 teaspoon ginger, minced
1 green chili, minced
1/2 teaspoon turmeric
1/2 teaspoon salt, or to taste
1 teaspoon lemon pepper
1 cup shredded fresh coconut or 2/3 cup unsweetened dried coconut*

* Soak unsweetened dry coconut in 1 cup hot water. Drain water before using.

In a large frying pan heat oil or ghee. Add ginger and chili and saute 1/2 minute. Add turmeric, salt and lemon pepper. Add green beans. Lower heat, cover and cook for 7 minutes.

Add coconut and a few tablespoons of water if dry. Simmer 10 minutes.

Serves 4
