Persian/Iranian Food Recipes
One of the great joys in my life is cooking, especially Persian dishes. One time a friend asked me if it was the actual cooking that I liked so much or the taste of the food. Truth be told I couldn't decide which one I enjoyed best.
I don't know when I first fell in love with Persian cuisine. It may have been when I visited a Persian restaurant and had Shirin Polo for the first time. I'll never forget my first taste of this chicken and rice dish, sweet with candied orange and carrots and studded with pistachios and almonds.
Some of the ingredients used in Persian cooking are Pistachios ~ Saffron ~ Dried Limes ~ Cinnamon ~ Apricots ~ Cardamom ~ Dates ~ Almonds ~Pomegranates ~ Rose water .
These ingredients are combined with rice and meat, vegetables and herbs. I don't think there is a more romantic cuisine in the world.
I
am still trying to perfect my Persian "tah dig" or "tadiq",
which is the crispy layer of rice that forms in the bottom of the pot when the
rice is perfectly cooked.
