I don't know when I first fell in love with Persian cuisine. It may have been when I visited a Persian restaurant and had Shirin Polo for the first time. I'll never forget my first taste of this chicken and rice dish, sweet with candied orange and carrots and studded with pistachios and almonds.

Some of the ingredients used in Persian cooking are Pistachios ~ Saffron ~ Dried Limes ~ Cinnamon ~ Apricots ~ Cardamom ~ Dates ~ Almonds ~Pomegranates ~ Rose water .

These ingredients are combined with rice and meat, vegetables and herbs. I don't think there is a more romantic cuisine in the world.

I am still trying to perfect my Persian "tah dig" or "tadiq", which is the crispy layer of rice that forms in the bottom of the pot when the rice is perfectly cooked.
