Fresh Cranberry Compote
This recipe comes from Emeri'ls Creole Christmas Cookbook published in
1997.
Fresh Cranberry Compote
6 ounces fresh cranberries
1 tablespoon orange zest
1 cup water
1/2 cup sugar
Pinch of ground cinnamon
Pinch of salt
1 tablespoon corn starch
1/4 cup fresh orange juice
In a non reactive saucepan combine cranberries, orange zest, water, sugar,
salt and cinnamon. Cook over medium heat bring to a boil and cook for
ten minutes. Dissolve cornstarch in orange juice and add to cranberry
mixture. Stir and simmer another 15 minutes until the mixture thickens.
Remove from heat. Cool and refrigerate.
In order to help assure the best flavor make sure your ground cinnamon
is fresh!
