This was a huge hit. Even I was amazed at how good this
was. You need the pan drippings when you make homemade gravy, that's what makes it so tasty. I used the pan drippings from the turkey and the homemade turkey broth I had made the day before. Another thing that makes gravy so good is the bits that are stuck to the bottom of the roaster. Unfortunately my roaster is non stick. I put a piece of aluminum foil on the bottom of the roaster, shiny side
up before I put the turkey in the roaster and got some great baked on bits which I used to help flavor the gravy.
Madeira
Gravy Recipe
Pour roaster pan drippings into measuring cup. Reserve 1/3 cup of the fat to the side then skim rest of fat until only dark dripping are remaining. Place roasting pan over
medium heat. Add 1 cup of Madeira wine into roasting pan to deglaze. Let wine reduce about 1/3. Pour into cup with de-fatted dark drippings . Add the reserved 1/3 cup of fat and flour or corn starch to pan to thicken. Cook and whisk until smooth. Add drippings/Madeira broth back to pan. Add 4 - 5 cups of homemade turkey broth. Continue to boil. Add salt and pepper to taste.
