I knew it would be perfect for my next cookout. It's simple, fresh and elegant
and it takes no time to make. There's nothing better, especially when you're entertaining
friends an family than a tasty recipe that is easy and only requires a few simple
ingredients. Of course, for this recipe where you're only cooking green beans
to crisp-tender you must have the freshest green beans. This recipe is attributed

Green Bean & Celery Salad
1/2 lbs. Green beans, trimmed 1 Tablespoon extra virgin olive oil 1/4
Cup thinly sliced shallots 2 Cups diagonally sliced celery 3 Tablespoons
lemon juice 1/3 Cup chopped parsley 2 Tablespoons grated lemon peel
Salt and Pepper to taste
Cook the green beans in lightly salted water for 5 to 7 minutes or until
tender-crisp. Drain the beans and plunge into a bowl of ice water. Drain thoroughly,
pat dry with paper towels.
