Homemade Soups, Green Bean Recipes

Another of our favorite recipes from the Company's Coming Soups & Sandwichs cookbook from Jean Paré. Ms. Paré describes this soup as "bright and colorful as well as tasty. Cooks in no time". We should probably add this recipe under our easy recipes library.

Green Bean Soup

5 cups chicken stock
4 cups fresh or frozen green beans, cut in short pieces
1/4 cup finely chopped onion
2 tablespoons diced celery
2 medium carrots, diced or sliced
1 teaspoon salt
1/4 teaspoon pepper
1 cup sliced pepperoni, smokies or other processed sausage
Cheddar cheese for garnish

Combine all ingredients except cheese in large pot. Bring to a boil and simmer, covered, for about 20 minutes. Serve with grated Cheddar cheese as a garnish in the center of each bowl.

Makes about 6 cups
