Homemade Madeira Gravy
Madeira Gravy Recipe
Pour roaster pan drippings into measuring cup. Reserve 1/3 cup of the fat to the side then skim rest of fat until only dark dripping are remaining. Place roasting pan over medium heat. Add 1 cup of Madeira wine into roasting pan to deglaze. Let wine reduce about 1/3. Pour into cup with de-fatted dark drippings . Add the reserved 1/3 cup of fat and flour or corn starch to pan to thicken. Cook and whisk until smooth. Add drippings/Madeira broth back to pan. Add 4 - 5 cups of homemade turkey broth. Continue to boil. Add salt and pepper to taste.
